想吃得健康一㸃, 其中一個元素是少吃精製的醬汁調味。當中有防腐, 添加, 反式脂肪, 色素, 增味劑, 高糖, 高鹽等等。真正食材味道的成份不多。當然趕放工回家煮飯那一刻。什麼都要快, 醬汁便成為好幇手。
若有時間, 可多加天然食材作調味。當中香料, 香草經常使用。那麽生果和果皮用作醃肉又有什麼好處呢?

醬汁是西餐的靈魂,尤其意大利麵。當煮意粉時,往往就方便到超市選購一樽二樽的意粉醬,有紅,有白有綠。類別大多是綠色的pesto,主要材料有Basil, parsley, olive oil, pine nut and cheese等。白色不外乎用cream, cheese做 base,當中加入蘑菇,薯仔,雞肉。。那紅醬,以蕃茄為首,稱為tomato sauce, 配上不同種類的香草,甚至加入肉醬成為Bolognese....

自家菜脯,蒜蓉辣椒菜脯 Homemade preserved radish , Fried egg with preserved radish
我覺得辣椒菜脯絶對係芳姐嘅發明。她是我的舊同事,現在已退休了。這種煮過的菜脯易做又美味。放入雪櫃,除時都食到。可加入麵食,可加少少在飯上。更可以在無餸的時候整菜脯炒蛋。絶對懶得起!!
加上自己曬菜脯,品質受控制。當然做菜脯需要曬一段時間,醃漬愈耐愈惹味。顏色愈深色。亦有助消化解胃脹之效。我的住家版本只曬上5天,做出來的效果也不錯,蘿蔔乾了也很香。不想在街買到加入大量防腐的菜脯,也可製作簡易版呢!

洛神花 (Roselle),學名Hibiscus Sabdariffa, 係Hibiscus的家族。 原產西非,在亜熱帶地區有種植。在廣東省,雲南一帶非常普遍。洛神花不單擁有一個好elegant嘅名字。其顏色鮮艷美丽,由淡紅至深棗紅色。非常吸引。
