麻辣孜然牛肉 Spicy cumin beef


很惹味啊!用孜然(cumin)做土匪雞翼,配羊肉串,也非常夾牛肉。食譜更使用和牛牛勁脊,牛味夠濃且嫩口。


材料:
和牛牛頸脊或其他牛肉(切片)
孜然粒  1茶匙 盅碎
青花椒 1茶匙 盅碎
乾辣椒 2隻大,盅碎 (中辣)
大紅椒 4隻 切幼
乾葱頭 3-4粒 拍扁
蒜 3粒 拍扁
葱白 4條,切粒
麻油 少許




牛肉醃料:
生抽少許
孜然粉 1湯匙
孜然粒 1茶匙
五香粉,糖,生粉,油 各少許
水 3湯匙
蒜片 1粒
煮前15分鐘加半瓶蓋米酒和1茶匙鹽


做法:


Ingredients :
Waygu beef chunk (sliced)
1 tsp whole cumin seed (crushed)
1  tsp dried green pepper/Zanthoxylum (crushed)
2 dried chili (crushed)
4 big red chili (sliced)
3 to 4 shallots (pressed)
3 cloves of garlic (pressed)
4 stalks of spring onion, white part (coarsely chopped )
Sesame oil (season at last)

Marinade of beef:
A bit light soya sauce 
1 tbsp ground cumin
1 tsp whole cumin seed
Five spice powder, oil, sugar and corn starch
3 tbsp water
1 garlic clove (sliced)
1/2 cap of Chinese cooking wine and 1 tsp of salt, mix with the beef 15mins before cook

Method (pls refer to the above video):
1. Preheat an iron pan, add oil, then stir fry the beef until lightly brown. Take out and set aside.
2. Sautee those spice until fragrant. Season with a bit sugar.
3. Bring the beef together, stir fry for a minute. Off heat, continue to fry 1 more minute.
4. Season with a bit sesame oil at last.
