素肉蕃茄麵 Noodle with tomatoes and vegetarian meat


醒胃蕃茄拌醬, 配刀削麵, 米線, 通粉, 飯及鍋巴均適宜。拌醬中的素肉粒可轉換免治豬肉, 免治牛肉。菜式很開胃, 精髓是加入桂林辣椒醬..


材料:
脱水素肉粒半碗
鮮冬菇 切細粒(或乾冬菇,先浸軟,切粒,加糖油,再蒸20分鐘)
蕃茄 6個 去皮切粒
茄醬 2-3 湯匙
糖 1湯匙
鹽少許
桂林辣椒醬 1-2茶匙
蒜頭 2粒切碎
生抽 少許
1.5碗水

Ingredients:
1/2 bowl dried soya meat
Fresh mushroom,  diced (or dried Shiitake mushroom, rehydrated,diced and steamed)
6 tomatoes, peeled and diced
2-3 tbsp ketchup
1 tbsp sugar
Salt
1-2 tsp Guilin chili sauce
2 gloves garlic, finely crushed
A bit light soy sauce
1.5 bowls of water



脱水素肉浸凍水約半小時, 隔走浸水
Soak the dried soya meat in cold water for 1/2 hour. Then drain


熱油, 炒香蒜蓉, 之後鮮冬菇和肉碎, 落鹽
Heat oil, stir fry garlic, then mushroom and rehydrated soya meat. Sesaon with a bit salt


加入鮮茄, 加糖
Add tomatoes and  sugar



加水, 蓋上, 細火煮到蕃茄軟身, 約10-15分鐘。開蓋, 微微壓爛蕃茄, 加入茄醬, 試味後再調節糖, 鹽
Set low heat, add water, cover the lid. Then cook for 10-15 mins over low heat. Open the lid, slightly press the tomatoes. Add ketchup and taste. Adjust sugar and salt.



開中大火, 稍收汁, 有需要可用粟粉水打薄芡。加入桂林辣椒醬及少許生抽。熄火
Set medium to high heat, thicken the sauce with corn starch slurry. Add Guilin chili sauce and a bit light soy sauce at last. Off heat


拌刀削麵吃, 很醒胃!
Serve hot with noodle

Tips:
1. 若用免治豬肉或牛油, 先略醃。
2. 若増加蕃茄,水可減少。

1. If using minced pork or beef, marinate the meat before cooking.
2. For adding more tomatoes , decrease water that to be added.
