米麴(Miyako Koji), 麴箘或麴種(Aspergillus Oryzae)可能你會陌生。但鹽麴(Shio Koji/Kome-Koji),味噌(Miso),醬油(Shouyu)和清酒(Sake),大家都認識而且日常生日活上經常使用於醃漬和調味。

米麴菌是一種帶有菌絲(hypha)的黴菌一類(Filamentous Fungus)在中國與日本料理中經常被用來發酵大豆來製作調味品。有成千年歷史呢!
