羅勒大葱煙腩意大利烘蛋 Basil and leek frittata with homemade bacon


意大利的Frittata也好,法國的Quiche也好,西班牙的Tortilla Potato..或是我們的菜莆毛豆蛋餅....通通都用蛋液混合食材去煎或焗。大多用鐵pan但有很多人改用可脫模蛋糕盆,方便正齊切出。

任何材料都可做Frittata,不一定當早餐,午餐晚餐也可。會先炒香食材,加蛋液後在火爐上烘一陣再放入焗爐。一般奶和cream只用很少,甚至不加。亦沒有批底。

Quiche相對會以cream或奶加蛋造成custard。可做批底亦可以沒有(crustless quiche)。混合材料後直接焗。那西班牙蛋餅的特色多是有薯仔。。我們中式的蛋餅乜不輸蝕,用毛豆加菜甫粉絲煎,不知幾美味。



除非有特定的蛋餅要做,如波菜蛋餅,一般是清雪櫃最佳的菜式。。只要注意,蛋先放室溫並只需略打蛋。蛋餅便夠鬆了。



食材,工具:
20cm鐵pan, 大蔥x 2, 羅勒,煙腩,雞蛋5隻,buffalo cheese(任何cheese)

Ingredients/cookware:
20cm skillet, leek x2, Basil, bacon, eggs x 5, buffalo cheese(any kind of cheese)





細火炒煙肉,迫出油, 放上紙吸油
fry bacon in low heat , discard fat





抹走pan內油,細火炒大蔥,之後羅勒,灑少許黑椒和鹽,放入煙肉
wipe out oil on pan, low heat, saute leek and basil, season with salt and pepper then pour bacon into the skillet


雞蛋略發, 倒入pan內, 保持細火
gently whisk the eggs and pour into the skillet, keep low heat



放上cheese
put cheese on the top


預熱焗爐150度,焗40分鐘
preheat oven, bake 40 mins at 150 Degree Celsius



不用心急,蛋邊開始收縮,待涼一點便可切件上枱,多灑上黑椒
cut into wedges, serve warm with extra pepper
Tips:
1. 任何蔬菜也可,如洋蔥,茴香,波菜但不宜選用易出水的蔬菜。
2. 任何cheese, 如parmesan cheese, gouda, mozzarella。
3. 如用煙肉,不宜加太多鹽,可加入其他香草或香料提升氣味。

Tips:
1. Choose any kind of vegi, like spinach, onion and fennel. 
2. Cheese,  like parmesan, gouda and mozzarella are good as well.
3. The bacon is salty, plenty of salt is recommended. Other herbs and spice could enable the aroma and taste.
