粟米肉粒飯乃茶餐廳必選碟頭飯。易入口, 很開胃。除了用罐頭粟米蓉外, 用新鮮粟米打成粟米忌廉湯亦理想。天然無添加的同時, 更重要是少吃罐頭產品。
罐頭, 由細吃到大..打開總有陣陣金屬味。金屬罐乃鋁製品..能釋出到食物中, 尤其在高温烹煮時..。此外, 大部分罐內有層含BPA的膠膜。為着阻隔鋁罐跟食物接觸。。那進食時把这在膠中找到的化學物質一并吸入。
新鮮有機粟米很易找到, 做粟米蓉也没難度。。效果不及罐裝濃味。卻有一份天然無添加的清甜。試試!
粟米忌廉蓉材料:
新鮮有機粟米 1支(起出粒粒)
牛油 1湯匙
麵粉 1.5湯匙
鮮奶 2 湯匙 或忌廉 1.5 湯匙
鹽少許
熱水1碗
肉粒飯材料:
1. 腍肉切粒 (以少許生抽, 白胡椒粉, 薑片, 油醃)
2. 新鮮有機粟米 1支 (起出粒粒)
3. 金華火腿 數片 (先浸熱水5分鐘, 榨乾水)
4. 薑片 1片
5. 白胡椒粉少許
6. 水 2碗
7. 雞蛋 1隻
Ingredients of creamy corn puree:
1 fresh organic corn kernel.
A knob of butter.
1.5 tbsp of flour.
2 tbsp of milk or 1.5 tbsp of cream.
Little bit salt.
A bowl of hot water.
For the pork sauce:
Pork cubes (marinate with little bit light soya sauce, ground white pepper, a pc of ginger, little bit oil).
1 fresh organic corn
Few pcs of Jinhua ham( Chinese ham ), soak into hot water for 5 mins, dry to reserve.
A pc of ginger
white pepper
2 bowls of water
1 egg
用少許牛油炒香粟米, 灑少許鹽, 取出
Heat a knob of butter, saute corn kernel, sprinkle with plenty of salt, take out corn
放牛油, 落麵粉, 攪匀, 加入2湯匙鲜奶或1.5湯匙忌廉

加入一碗熱水, 放回粟米, 煮約10分鐘, 落少許鹽
Bring 1 bowl of hot water to boil, put back the corn, simmer for 10 mins. Sprinkle with little bit salt
攪拌至幼滑
Blend to smooth
熱油, 下薑片, 炒豬肉至半熟, 落少許鹽及白胡椒粉,取出
Heat oil with a pc of ginger, fry the pork until medium cooked, season with a bit salt and white pepper, take out
熱油炒香金華火腿及粟米粒, 加水, 1片薑, 以細火煮15分鐘或金華火腿出味
Saute Jinhua ham and corn kernel, add water and a pc of ginger to boil for 15mins or until there is taste of ham from the soup
加入粟米蓉, 攪勻, 加入豬肉粒
Put corn puree together and mix well, put the pork cubes together
煲至2碗湯剩, 熄火。攪勻雞蛋後加入, 1分鐘後混合成蛋花, 灑上白胡椒粉調味。把火腿取出。
Boil the soup until 2 bowls left, off heat. Beat in 1 egg, stir 1 min later to mix well. Season with extra white pepper, remove ham.
拌入白飯炒底。清甜中帶㸃牛油鲜奶的香味。把西式湯做中式粟米肉粒飯..很creamy呢!
Tips:
1. 也可選用罐頭粟米湯做这菜式。情序一樣。
2. 以粟米作中式煮食。跟薑和白胡椒粉很夾, 亦能提升粟米的清甜。
3. 如果想多一㸃嚼口, 粟米蓉不要打得太幼滑。
