洛神花啫喱 Roselle jelly


超美的洛神花是入秋必選的食材。使用少量洛神花加水煮45分鐘,待液體夠濃,味道足夠便可以做啫喱。所以沒有一定的份量與水份。大約半斤花瓣對1.5L水煮。多一些花瓣,色深紅一點,味濃郁一些。





食譜在煮洛神花蜜的同時一并整啫喱,那就更方便了。吃啫喱同時拌入花蜜,非常醒胃。

材料(約8杯):
洛神花 1.5斤(先用3L水煮,大約煲至45分鐘便可取出部分洛神花水)
洛神花水 1L
蔗糖 50g 或自己需要的甜度
魚膠 12g









做法:
1. 洛神花花瓣洗淨去核。
2. 放入洛神花, 注水入煲,蓋過花瓣。
3. 中火,煲約45分鐘,花水夠紅,味足夠,便可取出1L. 並放進另一小煲。加糖,細火煮至溶解,試味再調節甜度。
4. 魚膠片浸凍水,再放入煲,攪拌至溶解。
5. 熄火便用篩隔出洛陽花啫喱液,注入杯中。
6. 雪1天。

剩下洛神花繼續煲至見底。放涼後注入蜜糖。詳情請重溫洛神花蜜食譜

Ingredients (8 servings) :
600g Roselle petals plus 3L water
1L Roselle liquid 
50g cane sugar or more
12g Gelatin 

Method:
1. Remove green seeds from Roselle,  wash and drain.
2. Bring Roselle in a big pot. Pour water to boil. No need to cover after boiling. 
3. Then, boil for 45 mins over medium heat. When the liquid is intense in texture with deep red, ladle 1L liquid into another saucepan. 
4. Set low heat, add sugar into the jelly water. Taste, then adjust sugar. Stir until sugar dissolved. 
5.Soak gelatin in cold water, then put it into the saucepan,  stir until melted. Off heat.
6. Pour the liquid into cups through a fine sieve.
7. Refrigerate for a day.

Tips:
Continue to boil the remaining Roselle until liquid is nearly reached to the bottom of the pot. Off heat, cool, pour honey in to make Roselle honey. Please refer to Roselle in honey recipe
