烤紅椒粉雞肉芝士 Grilled paprika chicken with cheese


邪惡,簡單,受大人細路歡迎。紅椒粉(paprika)是菜式的主角。主要增添顏色及帶出芳香味道。當中帶甜的甜椒粉(sweet paprika)最普遍使用。不同地方所出產的甜度,辣度,香味及顏色有很大的分別。既然要利用它的顏色,選購方面,以鮮色為佳,味道帶一點香甜較理想。




辣椒粉的黃,橙,紅色來自當中的類胡蘿蔔素(carotenoids),含豐富維他命A。試了好幾款,最喜歡左邊的noble sweet paprika,西班牙出產。顏色鮮紅,味帶清甜。使菜式鮮艷。中間的甜椒粉沒有來源但美國出品,不及noble sweet品種的靚但氣味濃郁,刺鼻,帶很微少的辣味。右邊是煙燻甜椒粉,煙燻味很強,在食物上,特別醃肉,着色深。除了中間外,其餘兩款品牌也推介。


材料:
雞肶肉連皮 2隻,切件
蒜片 適量
甜椒粉 2茶匙
Cheddar cheese 4片
乾parsley

雞肉醃料:
橄欖油 1湯匙
鹽 少許
白胡椒粉 少許



做法:
1. 雞肶肉切一口size, 混合醃料,醃2小時。之後加入蒜片及sweet paprika。





2. 準備鐵pan。先煎雞肉至6成熟,取出雞肉,隔去油,保留汁。
3. 抹去鐵pan油漬,放上芝士,之後雞件,皮向上。
4. 放入預熱烤爐230度。鐵pan放較高位置,烤約7分鐘。取出,灑上parsley,即成。


Tips:
1.雞肉先煎,能去除多餘雞油。
2. 除cheddar cheese外,Mozarrella, Edam cheese, Gouda cheese也適合。


Ingredients:
2 chicken thigh meat with skin, cut into bite size
Garlic pcs
2 tsp sweet paprika
4 pcs Cheddar cheese
Dried parsley

Marinades:
1 tbsp extra virgin olive oil
Salt
Ground white pepper

Directions:
1. Cut the chicken meat into bite size. Mix with marinades and refrigerate for 2 hours. Add garlic pcs and sweet paprika before cook.
2. Prepare a cast iron pan, fry the chicken pcs until golden brown and to medium done. Then, take out the chicken pcs and set aside. Skim off fat and reserve juice from the meat only.
3. Wipe off the oil from the pan, then put on the cheese, and put back the chicken pcs with skin side up.
4. Preheat oven and set grill to 230 degrees celsius. Place the iron pan at upper position of the oven, grill for 7 mins. Remove chicken from heat, sprinkle with a bit dried Parsley. Serve hot.

Tips:
1. Part of the oil from the chicken pcs can be removed after frying for a while before grill.
2. If not using Cheddar cheese, just replace with Mozarrella, Edam or Gouda cheese.
