墨魚紫菜脆脆 Cuttlefish and seaweed crisps


邪惡小食,墨魚膠加黑芝麻配紫菜。味道夾到不得了。撲上木薯粉使表面有層薄薄的脆脆。加杯特飲,很滿足。

材料:
墨魚膠 約1碗 
無鹽紫菜 適量
有機黑芝麻 (不經烘焙)或其他
木薯粉







做法:
1. 把少許墨魚膠放上紫菜片的一邊,之後芝麻。對摺,做成小包。
2. 撲上木薯粉。
3. 油溫8成,放入筷子有泡泡便可以炸。逐片撲粉,之後放入滾油。完成其餘。
4. 待全部完成。開大火,燒熱油,把所有紫菜包翻炸(此時很易燶)。一放入滾油立即取出。吸油,上碟。


非常美味邪惡的小食。點上少許黑芝麻醬拌食。停不到口啊!留心看,紫菜表面有層白色,这就是木薯粉脆脆。像很薄很薄的天婦羅。

Tips:
1. 手剁墨魚膠或街買的都有鹹味。前者只需加少少鹽,生粉木薯粉。後者不用調味。
2. 烘焙過的黑芝麻再經油炸易過火變燶。
3. 一包起的紫菜包適宜立即炸。一次過包起才炸。紫菜腍及濕。要炸耐一點。

Ingredients :
Around 1 bowl of Cuttlefish paste
Seaweed sheet (no salt)
Organic raw black sesame seeds or others
Tapioca flour
Oil

Directions:
1. Get a seaweed sheet, spread a bit cuttlefish paste over one side, and sprinkle with a bit black sesame seeds on it. Fold and cover by the other side.
2. Preheat oil to moderate hot. Test with a chopstick by piercing into hot oil. If there are bubbles around the chopstick. It can be ready for deep fry.
3. Coat the seaweed wrap with tapioca starch. Put it into hot oil immediately. Finish the remaining and deep fry one by one.
4. After finish all, reheat oil to very hot. Put all the seaweed crisps into hot oil again. Remove them from hot oil immediately. (Watch out, they will be burnt very quickly )
6. Put the seaweed crisps on kitchen paper.
5. Serve hot with extra black sesame seed sauce.

Tips:
1. Just add a little bit salt, starch for homemade cuttlefish paste.  No need to season with the store bought one. Since both taste with sea water .
2. If using toasted sesame seed,  it is more easier to get burnt.
3. It is better to deep fry the seaweed wrap right after stuffing with the cuttlefish paste.  Since the seaweed sheet will get moist very quickly. It will take a bit more time in deep frying.
